Hediard Glazed Fruits
Glazed fruits is a very specific tradition that involves selecting fruit of rare perfection, then immersing it in sugar syrup.In order to preserve its original appearance, the entire fruit is immersed in the simmering syrup several times. Slowly the fruit loses its water content and becomes gently soaked in sugar until the desired softness is obtained.
This skilful, albeit long and difficult sleight of hand, is technically referred to as osmosis. The result is like hearing the perfect chord, ready to melt in the mouth in wonderful harmony.
